Living Herbs for Healthy Holiday Cooking

Salinas, Calif. - November 13, 2009 - As the holidays come closer, we all look forward to our favorite homemade meals. As we focus more on being green and chemical free in both our lifestyles and eating habits, it's important to look for simple ways to incorporate these principles into the holiday celebrations. To do so, Rocket Farms suggests using living herbs to season your feasts.

Living herbs offer many physical and environmental benefits. Unlike herbs sold in plastic clam shell containers, there are no plastic shells to throw into the dumpsters, and nothing goes to waste. Clam shell herbs also contain chemicals to help preserve them until used in your food. Dried herbs are the other alternative, but they are not as flavorful or colorful as live herbs and any nutrition that was there is gone. Think about it- would you ever want to eat pesto made of dried herbs or basil that had sat in plastic and been covered with chemicals?

Living herbs offer the freshest way to cook, contain no chemicals, do not litter, and can be used again and again. Many steer clear of living herbs because they do not understand how they are used, both in growing and cooking.

Once you buy your herb plant, treat it like any other house plant or put it on your patio. It needs sun and water when it starts to get dry. Herb plants do not need to be planted in the ground. When you need some basil, rosemary, thyme or whatever herbs you are growing, just pinch off the stems starting at the top of the plant.

For those delicious family recipes, the only difference in cooking when using fresh herbs in place of dried herbs is that you double the amount. So if a recipe calls for one tablespoon of dried herbs you would use two tablespoons of fresh herbs. This difference is because dried herbs are more compact.
