Tantalizing Mexican Cuisine Comes to Carmel

CARMEL, CALIF. – March 15, 2007 The fresh ingredients that characterize the traditional meals of Mexico will soon be available on California's central coast. Hola! Mexican Restaurant and Cantina opens this Monday, March 19, at the Barnyard Shopping Village in Carmel, California. Hola! owners Richard and Denise Beale combine their love for hand-crafted Mexican arts and crafts with an enthusiasm for regional Mexican cuisine. They originated the successful menu and concept at the restaurant's two other California locations in Belmont and Burlingame.

The menu created by the Beales and executive Chef Felipe Cisneros features a variety of big Mexican favorites such as tacos and enchiladas alongside unique regional dishes. Chef Cisneros, originally from Mexico City, Mexico, routinely looks for ways to improve his recipes, so customers can expect to be surprised by innovative flavors and fresh ingredients.

Rellenos en Nogada, one of the restaurant's signature dishes, is comprised of two large poblano chiles stuffed with Mexican-style picadillo beef, topped with walnut cream sauce and sprinkled with pomegranates. Pollo en Crema Chipotle features pieces of boneless, skinless chicken breast, sautéed with onions and bell peppers in a chipotle sour cream sauce.

Colorful glassware, hand painted ceramics, and custom crafted iron work from Mexico enliven the restaurant's interior, while imported Mexican beers and near 100 varieties of Tequila promise to draw customers to Hola! Mexican Restaurant and Cantina's full-service bar. The restaurant will be open daily for lunch and dinner: Sunday and Monday from 11 a.m.–9:00 p.m., Tuesdays and Wednesdays from 11:00 a.m.-10:00 p.m., and on Thursday, Friday and Saturday from 11:00 a.m.-11:00 p.m. with the bar remaining open later on these days.
